Let’s talk a little bit about this overlooked area of German food culture.
We ate it twice, bit you only get one photo because I’m way better at eating the food than I am at taking photos I of it.

It’s basically their own version of a thin crust pizza. It’s generally with white sauce instead of red.
I find you get more white sauce based and less tomato sauce based as you move to the north. Could it be the length of the summer tomato grow time? This in the north needed the fat from a cream based sauce to survive the frigid winters? Yes, yes I think so.
Regardless, the flammkuchen was delicious, we had it twice and enjoyed it both times. I would actually describe the crust as closer to a grilled tortilla than a pizza crust, it’s that thin. Then a yummy light spread of cream based sauce, green onions, and some kind of diced German sausage.
If that doesn’t sound good to you, well I have failed you because it was quite delicious and needs it’s day in the sun.
